Ingredients 

Main Ingredients

  • 2 tablespoon Olive Oil
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Paprika
  • 1 can Chickpeas, drained and rinsed
  • 4 cups Vegetable Broth
  • 4 cups Fresh Spinach
  • to taste Salt and Pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add chopped onion and cook until translucent, about 5 minutes.
  3. 3. Stir in minced garlic, ground cumin, ground coriander, and paprika. Cook for another minute.
  4. 4. Add chickpeas and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. 5. Add fresh spinach and cook until wilted, about 3-5 minutes.
  6. 6. Season with salt and pepper to taste. Serve hot.
