Ingredients 

Main Ingredients

  • 1 can chickpeas drained and rinsed
  • 2 cups fresh spinach
  • 4 large portobello mushrooms stems removed
  • 2 cloves garlic minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Brush portobello mushrooms with olive oil, season with salt and pepper.
  3. Place mushrooms on a baking sheet, bake for 15 minutes.
  4. In a pan, heat olive oil over medium heat, add garlic and sauté until fragrant.
  5. Add chickpeas and spinach, cook until spinach is wilted.
  6. Remove mushrooms from oven, fill with chickpea-spinach mixture.
  7. Serve warm.
