Main Ingredients
- 1 can chickpeas drained and rinsed
- 1 avocado peeled and pitted
- ¼ cup fresh dill chopped
- ¼ cup red onion finely chopped
- ¼ cup cucumber diced
- ¼ cup cherry tomatoes halved
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 4 large lettuce leaves or wraps
In a bowl, mash the avocado with a fork.
Add the dill, lemon juice, olive oil, salt, and pepper. Mix well.
In another bowl, combine chickpeas, red onion, cucumber, and cherry tomatoes.
Add the avocado dill sauce to the chickpea mixture and stir to combine.
Spoon the mixture onto lettuce leaves or wraps.
Roll up and serve immediately.
