Ingredients 

Main Ingredients

  • 1 can Chickpeas drained and rinsed
  • 1 cup Cucumber diced
  • 1 cup Tomatoes diced
  • ¼ cup Red Onion finely chopped
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt or to taste
  • ½ teaspoon Black Pepper freshly ground
  • 4 pieces Whole Wheat Tortillas

Instructions 

  1. 1. In a mixing bowl, mash the chickpeas with a fork until slightly chunky.
  2. 2. Add the cucumber, tomatoes, red onion, olive oil, lemon juice, salt, and black pepper to the bowl. Mix well.
  3. 3. Lay out the tortillas and spoon the chickpea mixture onto each one.
  4. 4. Roll up the tortillas, cut in half if desired, and serve immediately.
