Ingredients 

Main Ingredients

  • 1 can Chickpeas drained and rinsed
  • 1 cup Cucumber diced
  • 1 cup Cherry Tomatoes halved
  • ¼ cup Red Onion finely chopped
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste
  • 4 pieces Whole Wheat Tortillas

Instructions 

  1. In a mixing bowl, mash the chickpeas with a fork until chunky.
  2. Add the cucumber, cherry tomatoes, red onion, olive oil, lemon juice, salt, and black pepper. Mix well.
  3. Lay out the tortillas and evenly distribute the chickpea salad mixture onto each one.
  4. Roll up the tortillas, cut in half if desired, and serve immediately.
