Main Ingredients
- 1 can Chickpeas drained and rinsed
- 2 tablespoon Mayonnaise
- 1 tablespoon Dijon Mustard
- 1 tablespoon Lemon Juice freshly squeezed
- 1 stalk Celery finely chopped
- 2 tablespoon Red Onion finely chopped
- to taste Salt and Pepper
- 8 slices Bread whole grain or your choice
- as needed Lettuce optional
1. In a mixing bowl, mash the chickpeas with a fork until chunky.
2. Add mayonnaise, Dijon mustard, lemon juice, celery, and red onion. Mix well.
3. Season with salt and pepper to taste.
4. Spread the chickpea mixture onto slices of bread. Add lettuce if desired.
5. Top with another slice of bread, cut in half, and serve.
