Ingredients 

Main Ingredients

  • 1 can Chickpeas drained and rinsed
  • 1 head Radicchio leaves separated
  • 1 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 clove Garlic minced
  • 1 pinch Salt to taste
  • 1 pinch Black Pepper to taste

Instructions 

  1. 1. In a mixing bowl, combine chickpeas, olive oil, lemon juice, minced garlic, salt, and black pepper.
  2. 2. Mash the chickpeas slightly with a spoon to combine all ingredients well.
  3. 3. Spoon the chickpea mixture onto radicchio leaves.
  4. 4. Wrap the radicchio leaves around the chickpea mixture and serve immediately.
