Main Ingredients
- 1 can Chickpeas drained and rinsed
- 2 cups Green Beans trimmed
- 1 Red Bell Pepper sliced
- ½ cup Kalamata Olives pitted
- ¼ cup Red Onion thinly sliced
- 2 tablespoon Capers
- 2 Hard-Boiled Eggs halved
- ¼ cup Fresh Parsley chopped
Dressing
- ¼ cup Olive Oil
- 2 tablespoon Red Wine Vinegar
- 1 tablespoon Dijon Mustard
- 1 clove Garlic minced
- to taste Salt and Pepper
1. Blanch the green beans in boiling water for 2-3 minutes, then transfer to ice water to cool. Drain and set aside.
2. In a large mixing bowl, combine chickpeas, green beans, red bell pepper, olives, red onion, capers, and parsley.
3. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, salt, and pepper.
4. Pour the dressing over the salad and toss to combine.
5. Top the salad with halved hard-boiled eggs. Serve immediately or chill for later.
