Chickpea Miso Noodle Soup

Main Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup carrots, sliced
- 1 cup celery, sliced
- 4 cups vegetable broth
- 1 can chickpeas, drained and rinsed 15 oz can
- 2 tablespoon miso paste
- 1 cup noodles your choice of noodles
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- to taste salt and pepper
- 2 tablespoon green onions, chopped for garnish
1. Heat olive oil in a large pot over medium heat.
2. Add diced onion and cook until translucent, about 5 minutes.
3. Add minced garlic, sliced carrots, and celery. Cook for another 5 minutes.
4. Pour in vegetable broth and bring to a boil.
5. Add chickpeas and noodles. Cook according to noodle package instructions.
6. Stir in miso paste, soy sauce, and sesame oil. Season with salt and pepper to taste.
7. Serve hot, garnished with chopped green onions.
