  • 1 cup chickpea flour
  • 1 cup water
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper freshly ground

Instructions 

  1. Preheat oven to 450°F (230°C).
  2. In a mixing bowl, whisk together chickpea flour, water, olive oil, salt, and pepper until smooth.
  3. Let the batter rest for at least 30 minutes.
  4. Heat a cast iron skillet in the oven for 5 minutes.
  5. Remove skillet, add a bit of olive oil to coat, and pour in the batter.
  6. Bake for 10-15 minutes until the edges are crispy and the top is golden brown.
  7. Remove from oven, cut into wedges, and serve warm.
