Ingredients 

Main Ingredients

  • 1 can Chickpeas drained and rinsed
  • 1 cup Cherry Tomatoes halved
  • ½ cup Cucumber diced
  • ¼ cup Red Onion finely chopped
  • ½ cup Feta Cheese crumbled
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Dried Oregano
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. In a large mixing bowl, combine the chickpeas, cherry tomatoes, cucumber, red onion, and feta cheese.
  2. In a small bowl, whisk together the olive oil, lemon juice, and dried oregano.
  3. Pour the dressing over the salad and toss to combine.
  4. Season with salt and black pepper to taste. Serve immediately or refrigerate for later.
