Ingredients

  • 1 cup chickpeas, cooked drained and rinsed
  • 1 cup cucumber, diced
  • ½ cup tomatoes, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh parsley, chopped
  • ¼ cup fresh mint, chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper freshly ground

Instructions 

  1. In a large mixing bowl, combine the chickpeas, cucumber, tomatoes, red onion, parsley, and mint.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
  3. Pour the dressing over the chickpea mixture and toss to combine.
  4. Serve immediately or refrigerate for an hour to let the flavors meld.
