Chickpea Cauliflower Stew
A hearty and healthy stew made with chickpeas and cauliflower.

Main Ingredients
- 1 head Cauliflower cut into florets
- 2 cups Chickpeas cooked or canned
- 1 large Onion diced
- 3 cloves Garlic minced
- 1 tablespoon Olive Oil
- 1 teaspoon Cumin
- 1 teaspoon Turmeric
- 4 cups Vegetable Broth
- 1 can Diced Tomatoes
- to taste Salt and Pepper
Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent.
Add minced garlic, cumin, and turmeric. Cook for another minute.
Add cauliflower florets, chickpeas, diced tomatoes, and vegetable broth. Bring to a boil.
Reduce heat and let it simmer for about 20-25 minutes, or until cauliflower is tender.
Season with salt and pepper to taste. Serve hot.
