- 1 can Chickpeas drained and rinsed
- 2 tablespoon Olive Oil
- 1 clove Garlic minced
- 1 cup Cherry Tomatoes halved
- 1 tablespoon Balsamic Vinegar
- 1 loaf Baguette sliced
- to taste Salt and Pepper
- 1 tablespoon Fresh Basil chopped
Preheat oven to 400°F (200°C).
In a mixing bowl, combine chickpeas, olive oil, garlic, cherry tomatoes, and balsamic vinegar. Season with salt and pepper.
Spread the mixture onto a baking sheet and roast for 10 minutes.
While the chickpea mixture is roasting, toast the baguette slices in the oven until golden brown.
Top each toasted baguette slice with the roasted chickpea mixture and garnish with fresh basil.
