  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 cup Quinoa cooked
  • 1 cup Mixed Greens
  • 0.5 cup Cherry Tomatoes halved
  • 0.25 cup Feta Cheese crumbled
  • 1 tablespoon Lemon Juice freshly squeezed

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add chickpeas, cumin, and paprika. Cook for 5-7 minutes until chickpeas are slightly crispy.
  3. In a mixing bowl, combine cooked quinoa, mixed greens, cherry tomatoes, and feta cheese.
  4. Add cooked chickpeas to the bowl and drizzle with lemon juice. Toss to combine.
  5. Serve immediately.
