Main Ingredients
- 1 can Chickpeas drained and rinsed
- 2 units Avocados diced
- 1 cup Cherry Tomatoes halved
- ¼ cup Red Onion finely chopped
- ¼ cup Cilantro chopped
Dressing
- 2 tablespoon Olive Oil
- 1 unit Lime juiced
- 1 clove Garlic minced
- to taste Salt
- to taste Black Pepper
1. In a large mixing bowl, combine the chickpeas, avocados, cherry tomatoes, red onion, and cilantro.
2. In a small bowl, whisk together the olive oil, lime juice, minced garlic, salt, and black pepper.
3. Pour the dressing over the salad and toss gently to combine.
4. Serve immediately or refrigerate for up to 2 hours before serving.
