Chickpea And Cauliflower Tomato Stew Recipe

Main Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cauliflower, cut into florets
- 1 can chickpeas, drained and rinsed
- 1 can diced tomatoes
- 2 cups vegetable broth
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- Salt and pepper to taste
- Fresh cilantro, chopped (optional)
Heat olive oil in a large pot over medium heat.
Add onion and garlic, sauté until softened.
Add cauliflower florets, cook for 5 minutes.
Stir in chickpeas, diced tomatoes, vegetable broth, cumin, and coriander.
Bring to a boil, then reduce heat and simmer for 20 minutes.
Season with salt and pepper.
Garnish with fresh cilantro if desired.
