Ingredients

  • 4 pieces Chicken Breasts
  • 2 large Sweet Potatoes peeled and cubed
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 teaspoon Paprika

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, toss the sweet potatoes with 1 tablespoon of olive oil, salt, and paprika.
  3. Place the sweet potatoes on a baking sheet and roast for 20 minutes.
  4. While the sweet potatoes are roasting, season the chicken breasts with salt and pepper.
  5. Heat the remaining olive oil in a pan over medium-high heat and sear the chicken breasts for 2-3 minutes on each side.
  6. After 20 minutes, add the seared chicken breasts to the baking sheet with the sweet potatoes and roast for an additional 25 minutes or until the chicken is cooked through.
  7. Serve hot and enjoy!
