Ingredients 

Main Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 jalapeño, seeded and chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • 2 cups cooked chicken, shredded
  • 1 cup corn kernels
  • 1 cup black beans, rinsed and drained
  • 1 lime, juiced
  • 1 cup cilantro, chopped
  • to taste salt and pepper
  • 4 corn tortillas, cut into strips

Instructions 

  1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and jalapeño, and cook until softened.
  2. Add the cumin and chili powder, and cook for another minute.
  3. Pour in the chicken broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 10 minutes.
  4. Add the shredded chicken, corn, and black beans. Simmer for another 10 minutes.
  5. Stir in the lime juice and cilantro. Season with salt and pepper to taste.
  6. Serve hot, topped with tortilla strips.
