Chicken Tagine Recipe

Main Ingredients
- 1 kg Chicken thighs bone-in, skinless
- 2 tablespoon Olive oil
- 1 Onion chopped
- 3 cloves Garlic minced
- 1 teaspoon Ground ginger
- 1 teaspoon Ground cumin
- 1 teaspoon Ground cinnamon
- 1 teaspoon Turmeric
- 1 cup Chicken broth
- 1 cup Dried apricots halved
- 1 cup Canned chickpeas drained and rinsed
- 1 Lemon preserved, quartered
- 1 tablespoon Honey
- 0.5 cup Fresh cilantro chopped
1. Heat olive oil in a tagine or heavy-bottomed pot over medium heat.
2. Add chopped onion and cook until soft.
3. Stir in minced garlic, ground ginger, cumin, cinnamon, and turmeric. Cook for a minute.
4. Add chicken thighs and brown on all sides.
5. Pour in chicken broth and bring to a boil.
6. Add dried apricots, chickpeas, preserved lemon, and honey. Stir well.
7. Reduce heat, cover, and simmer for 45 minutes.
8. Garnish with fresh cilantro before serving.
