Marinade
- 500 g chicken breast, cut into strips
- 2 tablespoon soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 2 cloves garlic, minced
- 1 tablespoon vegetable oil
Peanut Sauce
- ½ cup peanut butter
- 2 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- ½ cup coconut milk
- 1 teaspoon chili paste
1. In a mixing bowl, combine soy sauce, fish sauce, brown sugar, turmeric, coriander, garlic, and vegetable oil. Add chicken strips and marinate for at least 30 minutes.
2. Thread the marinated chicken onto skewers.
3. Preheat the grill to medium-high heat. Grill the chicken skewers for about 5-7 minutes on each side or until fully cooked.
4. For the peanut sauce, combine peanut butter, soy sauce, lime juice, brown sugar, coconut milk, and chili paste in a bowl. Mix until smooth.
5. Serve the chicken satay with peanut sauce on the side.
