Ingredients 

Main Ingredients

  • 1 cup Arborio rice
  • 2 cups Chicken broth
  • 1 cup Cooked chicken, diced
  • 1 cup Parmesan cheese, grated
  • 1 small Onion, finely chopped
  • 2 cloves Garlic, minced
  • 2 tablespoon Olive oil
  • 1 cup White wine optional
  • to taste Salt and pepper

Instructions 

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the chopped onion and garlic, and sauté until translucent.
  3. Add the Arborio rice and stir to coat with the oil.
  4. Pour in the white wine (if using) and cook until the liquid is absorbed.
  5. Gradually add the chicken broth, one ladle at a time, stirring constantly until the liquid is absorbed before adding more.
  6. Once the rice is cooked and creamy, stir in the cooked chicken and grated Parmesan cheese.
  7. Season with salt and pepper to taste. Serve hot.
