  • 2 cups Cooked chicken, shredded
  • 1 cup Cheddar cheese, shredded
  • 4 Flour tortillas
  • 1 tablespoon Olive oil
  • 1 Salsa (optional)
  • 1 Sour cream (optional)

Instructions 

  1. 1. Heat the olive oil in a skillet over medium heat.
  2. 2. Place one tortilla in the skillet and sprinkle half of the cheese evenly over the tortilla.
  3. 3. Spread the shredded chicken over the cheese layer.
  4. 4. Sprinkle the remaining cheese over the chicken and top with the second tortilla.
  5. 5. Cook until the bottom tortilla is golden brown, then flip and cook the other side until golden brown and the cheese is melted.
  6. 6. Remove from skillet and cut into wedges. Serve with salsa and sour cream if desired.
