Ingredients

  • 4 pieces Chicken breasts boneless, skinless
  • ½ cup All-purpose flour
  • ¼ cup Olive oil
  • ¼ cup Butter unsalted
  • ½ cup Chicken broth
  • ¼ cup Lemon juice freshly squeezed
  • ¼ cup Capers drained
  • to taste Salt
  • to taste Black pepper freshly ground
  • 2 tablespoons Parsley chopped

Instructions 

  1. 1. Pound the chicken breasts to an even thickness using a meat mallet.
  2. 2. Season the chicken with salt and pepper, then dredge in flour, shaking off the excess.
  3. 3. Heat olive oil in a skillet over medium-high heat. Cook the chicken until golden brown, about 3-4 minutes per side. Remove and set aside.
  4. 4. In the same skillet, melt the butter. Add chicken broth, lemon juice, and capers. Bring to a boil, scraping up any browned bits from the bottom of the skillet.
  5. 5. Return the chicken to the skillet and simmer for 5 minutes, or until the chicken is cooked through and the sauce has thickened slightly.
  6. 6. Garnish with chopped parsley and serve immediately.
