Ingredients 

Main Ingredients

  • 2 pieces Chicken breasts, sliced
  • 1 piece Red bell pepper, sliced
  • 1 piece Yellow bell pepper, sliced
  • 1 piece Green bell pepper, sliced
  • 1 piece Onion, sliced
  • 2 tablespoon Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • to taste Salt and pepper
  • 2 cups Cooked rice
  • 1 cup Black beans, drained and rinsed
  • 1 cup Corn kernels
  • 1 piece Avocado, sliced
  • 1 piece Lime, cut into wedges
  • to taste Fresh cilantro, chopped

Instructions 

  1. Heat olive oil in a large pan over medium heat.
  2. Add chicken slices and cook until browned.
  3. Add bell peppers and onion, cook until softened.
  4. Season with chili powder, cumin, paprika, salt, and pepper.
  5. In a bowl, layer rice, black beans, corn, and cooked chicken mixture.
  6. Top with avocado slices, lime wedges, and fresh cilantro.
