Main Ingredients
- 2 pieces Chicken breasts, sliced
- 1 piece Red bell pepper, sliced
- 1 piece Yellow bell pepper, sliced
- 1 piece Green bell pepper, sliced
- 1 piece Onion, sliced
- 2 tablespoon Olive oil
- 1 teaspoon Chili powder
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- to taste Salt and pepper
- 2 cups Cooked rice
- 1 cup Black beans, drained and rinsed
- 1 cup Corn kernels
- 1 piece Avocado, sliced
- 1 piece Lime, cut into wedges
- to taste Fresh cilantro, chopped
Heat olive oil in a large pan over medium heat.
Add chicken slices and cook until browned.
Add bell peppers and onion, cook until softened.
Season with chili powder, cumin, paprika, salt, and pepper.
In a bowl, layer rice, black beans, corn, and cooked chicken mixture.
Top with avocado slices, lime wedges, and fresh cilantro.
