Ingredients 

Main Ingredients

  • 2 cups cooked, shredded chicken
  • 1 cup shredded cheese
  • 8 small tortillas
  • 1 can enchilada sauce
  • ½ cup chopped onions
  • ½ cup chopped bell peppers
  • ¼ cup chopped cilantro
  • to taste Salt and pepper

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix chicken, half the cheese, onions, bell peppers, and cilantro.
  3. Season with salt and pepper.
  4. Fill tortillas with the mixture and roll them up.
  5. Place rolled tortillas in a baking dish.
  6. Pour enchilada sauce over the top.
  7. Sprinkle remaining cheese on top.
  8. Bake for 25 minutes or until cheese is melted and bubbly.
