Instructions
Preheat oven to 350°F (175°C).
In a bowl, mix chicken, half the cheese, onions, bell peppers, and cilantro.
Season with salt and pepper.
Fill tortillas with the mixture and roll them up.
Place rolled tortillas in a baking dish.
Pour enchilada sauce over the top.
Sprinkle remaining cheese on top.
Bake for 25 minutes or until cheese is melted and bubbly.
