Ingredients

  • 4 zucchini medium-sized
  • 2 cups cooked chicken shredded
  • 1 cup Alfredo sauce
  • 1 cup mozzarella cheese shredded
  • ¼ cup Parmesan cheese grated
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste salt and pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Cut zucchini in half lengthwise and scoop out the seeds to create boats.
  3. In a skillet, mix shredded chicken, Alfredo sauce, garlic powder, Italian seasoning, salt, and pepper. Cook until heated through.
  4. Fill zucchini boats with the chicken mixture and place them in a baking dish.
  5. Top with mozzarella and Parmesan cheese.
  6. Bake for 25 minutes or until zucchini is tender and cheese is golden brown.
