  • 1 cup couscous
  • 1 ¼ cups boiling water
  • 1 pint cherry tomatoes, halved
  • ¼ cup red onion, finely chopped
  • ¼ cup fresh parsley, chopped
  • ¼ cup feta cheese, crumbled
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions 

  1. Pour boiling water over couscous in a large bowl. Cover and let sit for 5 minutes.
  2. Fluff couscous with a fork.
  3. Add cherry tomatoes, red onion, parsley, and feta cheese.
  4. Drizzle with olive oil and lemon juice. Season with salt and pepper.
  5. Toss to combine and serve.
