Cherry Tomato Couscous Salad Recipe
A light and refreshing couscous salad with cherry tomatoes, red onion, parsley, and feta cheese.

Main Ingredients
- 1 cup couscous
- 1 ¼ cups boiling water
- 1 pint cherry tomatoes, halved
- ¼ cup red onion, finely chopped
- ¼ cup fresh parsley, chopped
- ¼ cup feta cheese, crumbled
- 2 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Pour boiling water over couscous in a large bowl. Cover and let sit for 5 minutes.
Fluff couscous with a fork.
Add cherry tomatoes, red onion, parsley, and feta cheese.
Drizzle with olive oil and lemon juice. Season with salt and pepper.
Toss to combine and serve.
