Crust
- 1 ½ cups all-purpose flour
- ½ cup unsalted butter cold, cut into cubes
- ¼ cup sugar
- 1 pinch salt
- 1 large egg yolk
- 2 tablespoon cold water
Filling
- 1 cup almond flour
- ½ cup sugar
- ½ cup unsalted butter softened
- 2 large eggs
- 1 teaspoon vanilla extract
- ¼ teaspoon almond extract
- 2 cups fresh cherries pitted and halved
1. Preheat your oven to 350°F (175°C).
2. In a mixing bowl, combine flour, sugar, and salt for the crust. Add cold butter and mix until it resembles coarse crumbs.
3. Add egg yolk and cold water. Mix until the dough comes together. Press into a tart pan and refrigerate for 15 minutes.
4. Bake the crust for 15 minutes, then let it cool.
5. For the filling, beat together almond flour, sugar, and softened butter until creamy. Add eggs, vanilla, and almond extract. Mix well.
6. Spread the filling over the cooled crust. Arrange cherries on top.
7. Bake for 30 minutes or until the filling is set and golden.
8. Let the tart cool before serving.
