Ingredients 

Crust

  • 1 cup Graham cracker crumbs
  • 2 tablespoon Sugar
  • 4 tablespoon Butter, melted

Filling

  • 8 oz Cream cheese, softened
  • ¼ cup Sugar
  • 1 teaspoon Vanilla extract
  • 1 Egg

Instructions 

  1. Preheat oven to 325°F (163°C). Line a muffin tin with paper liners.
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of each muffin liner.
  3. In another bowl, beat cream cheese, sugar, and vanilla extract until smooth. Add egg and mix until combined.
  4. Spoon the cream cheese mixture over the crusts in the muffin tin.
  5. Bake for 15 minutes or until the centers are set. Let cool, then refrigerate for at least 2 hours before serving.
