Ingredients 

For the Salad

  • 2 cups Cooked chicken, shredded
  • 4 cups Mixed greens
  • 1 cup Cherry tomatoes, halved
  • ½ cup Cucumber, sliced
  • ¼ cup Red onion, thinly sliced

For the Champagne Vinaigrette

  • ¼ cup Champagne vinegar
  • ½ cup Olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Honey
  • 1 clove Garlic, minced
  • to taste Salt and pepper

Instructions 

  1. 1. In a mixing bowl, whisk together champagne vinegar, Dijon mustard, honey, and minced garlic.
  2. 2. Slowly drizzle in olive oil while whisking continuously until vinaigrette is emulsified. Season with salt and pepper to taste.
  3. 3. In a large bowl, combine shredded chicken, mixed greens, cherry tomatoes, cucumber, and red onion.
  4. 4. Pour the champagne vinaigrette over the salad and toss to coat evenly.
  5. 5. Serve immediately and enjoy!
