Ingredients

  • 1 head Cauliflower
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 cup Heavy Cream
  • to taste Salt
  • to taste Pepper

Instructions 

  1. 1. In a large pot, sauté the chopped onion and minced garlic until translucent.
  2. 2. Add the cauliflower florets and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. 3. Use a blender to puree the soup until smooth.
  4. 4. Return the soup to the pot, stir in the heavy cream, and season with salt and pepper to taste. Heat through but do not boil.
  5. 5. Serve hot and enjoy!
