Ingredients 

Main Ingredients

  • 1 head Cauliflower cut into florets
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper freshly ground
  • 4 slices Bread whole grain or your choice
  • 1 cup Lettuce shredded
  • 1 medium Tomato sliced
  • ¼ cup Hummus optional

Instructions 

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. Toss the cauliflower florets with olive oil, salt, and black pepper in a mixing bowl.
  3. 3. Spread the cauliflower on a baking tray and roast for 20 minutes or until golden brown.
  4. 4. Toast the bread slices.
  5. 5. Assemble the sandwich by layering roasted cauliflower, lettuce, tomato slices, and hummus (if using) between the toasted bread slices.
  6. 6. Serve immediately.
