Cauliflower Rice Burrito Bowl Recipe

Main Ingredients
- 1 head Cauliflower riced
- 1 tablespoon Olive Oil
- 1 cup Black Beans cooked
- 1 cup Corn cooked
- 1 cup Cherry Tomatoes halved
- 1 avocado Avocado sliced
- 1 cup Salsa
- 1 tablespoon Lime Juice freshly squeezed
- 1 teaspoon Cumin
- 1 teaspoon Chili Powder
- to taste Salt
- to taste Pepper
1. Heat olive oil in a skillet over medium heat.
2. Add riced cauliflower, cumin, chili powder, salt, and pepper. Cook for 5-7 minutes until tender.
3. In a bowl, layer cauliflower rice, black beans, corn, cherry tomatoes, avocado, and salsa.
4. Drizzle with lime juice and serve.
