Cauliflower Puree With Chickpeas
A creamy and nutritious cauliflower puree paired with spiced chickpeas.

Main Ingredients
- 1 head Cauliflower cut into florets
- 1 can Chickpeas drained and rinsed
- 2 tablespoon Olive Oil
- 1 teaspoon Cumin
- 1 teaspoon Paprika
- 1 clove Garlic minced
- 1 cup Vegetable Broth
- to taste Salt
- to taste Pepper
Preheat oven to 400°F (200°C).
Toss cauliflower florets with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet and roast for 25 minutes.
In a saucepan, heat 1 tablespoon olive oil over medium heat. Add garlic and cook until fragrant.
Add roasted cauliflower and vegetable broth to the saucepan. Simmer for 10 minutes.
Transfer mixture to a blender and puree until smooth. Season with salt and pepper.
In the same saucepan, add chickpeas, cumin, and paprika. Cook until chickpeas are heated through.
Serve cauliflower puree topped with spiced chickpeas.
