Ingredients 

Main Ingredients

  • 1 head Cauliflower cut into florets
  • 2 large Potatoes peeled and diced
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 tablespoon Ginger minced
  • 1 tablespoon Curry Powder
  • 1 teaspoon Turmeric
  • 1 teaspoon Cumin
  • 1 can Diced Tomatoes 14 oz can
  • 1 cup Coconut Milk
  • 1 cup Vegetable Broth
  • to taste Salt
  • to taste Black Pepper
  • 2 tablespoon Olive Oil

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, garlic, and ginger. Sauté until fragrant.
  3. Add curry powder, turmeric, and cumin. Cook for another minute.
  4. Add diced tomatoes, coconut milk, and vegetable broth. Stir well.
  5. Add cauliflower florets and diced potatoes. Bring to a boil.
  6. Reduce heat and simmer for 20-25 minutes, until vegetables are tender.
  7. Season with salt and black pepper to taste. Serve hot.
