Ingredients 

Main Ingredients

  • 1 head Cauliflower chopped
  • 1 cup Lentils rinsed
  • 1 tablespoon Olive oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable broth
  • 1 teaspoon Cumin
  • 1 teaspoon Coriander
  • to taste Salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, and sauté until softened.
  2. Add cauliflower, lentils, vegetable broth, cumin, and coriander. Bring to a boil, then reduce heat and simmer for 20-25 minutes until lentils are tender.
  3. Use a blender to puree the soup until smooth. Season with salt and pepper to taste.
