Main Ingredients

  • 1 head Cauliflower chopped
  • 2 large Leeks sliced
  • 4 cups Vegetable broth
  • 1 cup Heavy cream
  • 2 tablespoon Olive oil
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat.
  2. 2. Add sliced leeks and cook until softened, about 5 minutes.
  3. 3. Add chopped cauliflower and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. 4. Use a blender to puree the soup until smooth.
  5. 5. Stir in heavy cream and season with salt and black pepper to taste.
  6. 6. Serve hot and enjoy!
