Cauliflower Fried Rice Recipe
A healthy and delicious alternative to traditional fried rice, using cauliflower instead of rice.

Main Ingredients
- 1 head Cauliflower cut into florets
- 2 tablespoon Olive Oil
- 1 cup Frozen Peas and Carrots thawed
- 2 cloves Garlic minced
- 2 tablespoon Soy Sauce or tamari for gluten-free
- 2 pcs Eggs beaten
- 2 pcs Green Onions sliced
1. Place cauliflower florets in a food processor and pulse until it resembles rice.
2. Heat olive oil in a large skillet over medium heat. Add garlic and cook until fragrant.
3. Add peas and carrots, cook until tender.
4. Push veggies to the side, pour in beaten eggs, and scramble until fully cooked.
5. Add cauliflower rice and soy sauce, stir to combine. Cook for another 5-7 minutes.
6. Garnish with green onions and serve hot.
