Ingredients 

Main Ingredients

  • 1 head Cauliflower cut into florets
  • 1 can Chickpeas drained and rinsed
  • 4 cups Spinach fresh
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 1 tablespoon Ginger grated
  • 1 tablespoon Curry powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground turmeric
  • 1 can Coconut milk
  • 1 cup Vegetable broth
  • to taste Salt
  • to taste Black pepper

Instructions 

  1. 1. Heat oil in a large pot over medium heat. Add chopped onion and sauté until translucent.
  2. 2. Add minced garlic and grated ginger. Cook for another minute.
  3. 3. Stir in curry powder, ground cumin, and ground turmeric. Cook for 1-2 minutes until fragrant.
  4. 4. Add cauliflower florets, chickpeas, coconut milk, and vegetable broth. Bring to a simmer.
  5. 5. Cover and cook for 15-20 minutes, until cauliflower is tender.
  6. 6. Stir in fresh spinach and cook until wilted. Season with salt and black pepper to taste.
  7. 7. Serve hot with rice or naan.
