Ingredients 

Main Ingredients

  • 1 head Cauliflower cut into florets
  • 1 can Chickpeas drained and rinsed
  • 1 tablespoon Olive Oil
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 1 tablespoon Ginger minced
  • 2 tablespoon Curry Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Turmeric
  • 1 can Coconut Milk
  • 1 cup Vegetable Broth
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 0.5 cup Cilantro chopped, for garnish

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent.
  2. Add minced garlic and ginger, cook for another minute.
  3. Stir in curry powder, ground cumin, and ground turmeric. Cook for 2 minutes.
  4. Add cauliflower florets and chickpeas. Stir to coat with spices.
  5. Pour in coconut milk and vegetable broth. Bring to a simmer.
  6. Season with salt and black pepper. Cover and cook for 20 minutes, or until cauliflower is tender.
  7. Garnish with chopped cilantro before serving.
