Instructions
Soak cashews in hot water for 15 minutes.
Drain and blend cashews with nutritional yeast, water, lemon juice, garlic, and salt until smooth.
Preheat oven to 375°F (190°C).
Cut tops off bell peppers and remove seeds.
Fill peppers with cashew cheese mixture.
Place peppers in a baking dish and bake for 25 minutes.
