- 4 cups carrots, grated
- 1 cup raisins
- ½ cup mayonnaise
- 2 tablespoons lemon juice
- ¼ teaspoon salt
- ¼ teaspoon black pepper
1. In a large mixing bowl, combine grated carrots and raisins.
2. In a small bowl, mix mayonnaise, lemon juice, salt, and black pepper.
3. Pour the dressing over the carrot mixture and toss to coat.
4. Chill in the refrigerator for at least 30 minutes before serving.
