  • 1 cup Rolled oats
  • ½ cup Dried cranberries
  • ½ cup Whole wheat flour
  • ½ cup Brown sugar
  • ¼ cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • ½ teaspoon Ground cinnamon
  • ¼ teaspoon Salt

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine grated carrots, rolled oats, and dried cranberries.
  3. Add whole wheat flour, brown sugar, vegetable oil, and vanilla extract. Mix well.
  4. Stir in baking powder, ground cinnamon, and salt until fully incorporated.
  5. Drop spoonfuls of the dough onto a baking sheet.
  6. Bake for 15 minutes or until golden brown.
  7. Let cookies cool on a wire rack before serving.
