Ingredients 

Main Ingredients

  • 4 large carrots, peeled into noodles
  • 2 tablespoons olive oil
  • 0.5 cup sliced green onions
  • 2 cloves garlic, minced
  • 0.25 cup soy sauce
  • 2 tablespoons peanut butter
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 0.5 teaspoon red pepper flakes
  • 0.25 cup chopped peanuts
  • 0.25 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions 

  1. Heat olive oil in a large pan over medium heat.
  2. Add green onions and garlic, cook until fragrant.
  3. Stir in soy sauce, peanut butter, honey, rice vinegar, and red pepper flakes.
  4. Add carrot noodles, toss to coat and cook until tender.
  5. Serve topped with peanuts, cilantro, and lime wedges.
