Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 medium Onion chopped
  • 4 cups Carrots peeled and chopped
  • 3 cups Vegetable Broth
  • 1 can Coconut Milk
  • 1 teaspoon Ground Ginger
  • to taste Salt and Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent.
  3. Add carrots and cook for a few minutes.
  4. Pour in vegetable broth and bring to a boil. Reduce heat and simmer until carrots are tender.
  5. Stir in coconut milk and ground ginger. Simmer for another 5 minutes.
  6. Use a blender to puree the soup until smooth. Season with salt and pepper to taste.
  7. Serve hot and enjoy!
