Carrot Cheesecake Bars Recipe

Crust
- 1 cup graham cracker crumbs
- ¼ cup melted butter
Filling
- 2 cups finely grated carrots
- 16 oz cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon ground ginger
Preheat oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper.
In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of the prepared pan.
In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla, cinnamon, nutmeg, and ginger.
Fold in grated carrots. Pour mixture over crust.
Bake for 40 minutes or until set. Cool completely before cutting into bars.
