- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- ½ cup vegetable oil
- ½ cup granulated sugar
- ½ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup grated carrots
- ½ cup chopped walnuts optional
Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking pan.
In a mixing bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
In another bowl, mix together the oil, granulated sugar, and brown sugar until well combined. Add the eggs and vanilla extract, and mix until smooth.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the grated carrots and walnuts (if using).
Pour the batter into the prepared baking pan and spread it out evenly.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let cool completely before cutting into bars.
