Ingredients

  • 400 g spaghetti
  • 150 g pancetta diced
  • 2 large eggs
  • 100 g Pecorino Romano cheese grated
  • 1 teaspoon black pepper freshly ground
  • 1 clove garlic optional
  • to taste salt

Instructions 

  1. 1. Cook the spaghetti in a large pot of salted boiling water until al dente.
  2. 2. In a skillet, cook the pancetta until crispy. Add the garlic if using, and cook for another minute. Remove from heat.
  3. 3. In a mixing bowl, whisk together the eggs, grated Pecorino Romano cheese, and black pepper.
  4. 4. Drain the spaghetti, reserving some of the pasta water. Add the spaghetti to the skillet with the pancetta.
  5. 5. Quickly pour the egg mixture over the pasta, tossing to combine. Add reserved pasta water a little at a time to create a creamy sauce.
  6. 6. Serve immediately with extra grated cheese and black pepper on top.
