Caramelized Onion and Goat Cheese Tart

Main Ingredients
- 2 tablespoon Olive oil
- 3 large Onions sliced thin
- 1 tablespoon Balsamic vinegar
- 1 sheet Puff pastry thawed
- 4 oz Goat cheese crumbled
- 1 teaspoon Fresh thyme chopped
- to taste Salt and pepper
Preheat your oven to 400°F (200°C).
Heat olive oil in a skillet over medium heat. Add onions and cook until caramelized, about 20 minutes. Stir in balsamic vinegar and cook for another 2 minutes.
Roll out the puff pastry on a floured surface and place it in a tart pan. Prick the bottom with a fork.
Spread the caramelized onions over the puff pastry. Top with crumbled goat cheese and fresh thyme.
Bake in the preheated oven for 20 minutes, or until the pastry is golden and the cheese is bubbly. Season with salt and pepper to taste.
